Irish Desserts - Irish Whiskey Cake
This simple dessert is delicious but be careful how much whiskey you add! Make sure you warn your guests about the alcohol content, not a good dessert choice for children!
Irish Desserts - Irish Whiskey Cake - Ingredients
1 cup unsalted butter
8 oz soft cream cheese
6 large eggs
2 cups caster sugar
2 cups self-rising flour
Pinch of All Spice
1 teaspoon of vanilla essence
Single Measure of Irish whiskey (or double if you prefer a stronger whiskey taste)

Preheat an oven to 350 F
Grease and flour a round cake tin
Combine the butter and cream cheese with an electric mixer in a large bowl until light and fluffy
Gradually add the sugar until well blended
Slowly add the eggs one by one ensuring each one is completely blended before adding the next one
Beat in the 2 tablespoons of flour with the final egg
Stir in the remaining 2 cups flour until just combined
Add the Allspice and Vanilla essence
Pour in the Whiskey
Add the mixture to the cake tin
Cook for approximately one hour
Allow to cool for 15 minutes before removing from tin
Place onto a wire rack

450g butter, at room temperature
220g caster sugar
550g plain flour
1 teaspoon of vanilla essence

Preheat the oven to 180c
Cream the butter in a large bowl or in a food mixer until soft and creamy
Add caster sugar and continue to beat until the mix is pale
Sift in the flour and vanilla essence
Combine the mixture to form a dough
Lightly dust work surface and roll out dough
Cut out cookies using a cookie cutter (try using a shamrock shaped cookie cutter!)
Bake for 13–15 minutes
Place the cookies to a wire rack to cool

Add the measure of Irish Whiskey and sugar to a large glass
Pour in the black coffee stirring until the sugar has completely dissolved
Fill the glass with coffee leaving approximately 1 inch at the top of the glass (need room for the cream)
Hold a spoon over the glass and gentle pour the cream over the rounded part of the spoon so the cream slides slowly on top of the coffee forming a layer on top.
Serve immediately!
